Chocolate Orange Ice- Cream
Ice-cream is something I never thought I’d make, there’s only a few brands that I buy and eat really and I’d consider myself very particular when it comes to ice-cream. A few weeks ago there was an icc- cream machine on special offer on Groupon and I just had to have it, and for my birthday I got a book called The Icecreamists, so it was obviously meant to be! I had to buy the machine and I had to make ice-cream. So out of my new book I decided on “A chocwork Orange” a chocolate orange ice-cream.
250ml full fat milk
125ml double cream
2 egg yolks
88g caster sugar
50g cocoa powder
150g dark chocolate (70%)
65ml orange extract
Heat milk and cream in a large pan until it begin to steam.
Whisk the eggs and add caster sugar- whisk again until pale.
Take the heat off the milk and stir in the cocoa powder, then add the chocolate and orange extract, stir until completely melted.
Slowly pour the chocolate milk into the egg mixture whilst whisking continuously to prevent eggs from scrambling . Return to the saucepan and place over low heat until the mixture coats the back of a spoon thinly. DO NOT ALLOW IT TO BOIL.
Pour mixture into a bowl and set aside for about 30 minutes or until cooled to room temperature. Never put hot mixture in the fridge.
Once cooled refrigerate the mixture overnight. Then pour the mixture into ice-cream machine and churn (read the manufacturers ingredients first).
When churning is complete scrape the ice-cream into a freezer proof lidded container and freeze for at least 2 hours .
