Apple tart time of year

It’s that time of year where I make loads of Apple tarts. My boyfriend has apple trees in his garden so around this time every year I gather loads of apples and make tons of tarts! Then I eat them, gift them and freeze them! We always have dessert in our house on a Sunday so if anyone is ever feeling too lazy to make it there is always a tart in the freezer!

The pastry: 1 1/4 cup of plain flour, 1/2 cup of butter, 2 egg yolks, 1 tbsp of water.

Combine the flour and butter first, then in a jug mix the egg yolks and water and add to to make a dough. keep kneading until you can roll it without it sticking to everything.

Then measure your dish and roll so that its a little too big for the dish.

Apple mixture: 3-4 apples (depending on the size), 6oz of sugar, juice of 1/2 a lemon, 1 egg, 4 tbsp of water, 1 tbsp of flour.

Mix together the sugar, lemon, egg, flour and water over a bain marie and wait for it to thicken. Whisk to ensure it is smooth. Put cut apples into dish and cover with the syrup.

Lattice the top and cook at 200˚ for 45 minutes.
