When I found this recipe just before my Dad’s birthday, I knew it was THE ONE!
It was perfect, it had chocolate which I am addicted to and it was made with Ferrero Rochers! And it was nut based, Hazelnuts! And there was Nutella involved!
Ingredients
7 Large eggs, 1/2 cup sugar, 2 cups of ground hazelnuts, 3 tbsp flour, 3 tbsp cocoa powder, 3 tbsp baking powder.
Frosting
300g unsalted butter
2 1/4 cups chocolate
1/2 cup nutella
For decorating
1 1/2 cup of crushed wafer
10 Ferrero Rocher
3/4 cup hazelnuts chopped
To make the cake
Preheat the oven, line 2x 8 inch round pans with greaseproof paper and butter.
Sift the flour, cocoa and baking powder and then stir in the ground nuts.
Whip the eggs on a high speed until frothy, then add the sugar slowly but still whipping until tripled.
Fold in the dry ingredients, in 3 parts.
Divide the batter into the 2 pans and bake until a cake tester comes out clean.
Leave in the pans for 5 minutes before moving to cooling rack.
To make the frosting
Melt the chocolate and bring to room temperature.
Whip chocolate butter and Nutella until thoroughly combined.
Assembly
I was excited about this part because I had a new cake cutter that evilly layered cakes!It was amaze!
Split each cake into 2 layers.
Crush the wafers.
Place 1 layer of cake on your cake stand or plate, then put a spoon of frosting and spread evenly and sprinkle with wafers, put another cake layer on top and repeat the process until the cake is tacked together.
Cover the cake with the remaining frosting and decorate with the wafers, nuts and Ferrero Rocher.
