  Red Velvet Valentine Cupcakes


Ok so I never actually go around to making these on Valentine’s day BUT I did make these the other day for a work tea party! They were AMAZE, so soft and fluffy and red! Take a look at the recipe below!


Ingredients for the cupcakes

120g Margarine

300g caster sugar

2 large eggs

20g cocoa powder

50ml red food coloring

1tsp vanilla extract

300g plain flour

1tsp salt

240ml buttermilk

1tbsp white wine vinegar

1tsp bicarbonate of soda


Preheat the oven to 190º, and line the muffin case.

Cream the butter and sugar until pale and fluffy, then add the eggs one at a time.


Stir together the cocoa powder, food coloring and vanilla to make a paste in a small bowl.

Add the paste to the egg mixture and mix thoroughly.


Sift the flower and salt together and then add the flour to the batter in 3 parts, alternating with the buttermilk.

In another small bowl mix the vinegar and bicarbonate of soda, then add to the cake batter.

Spoon into cases (about 2tbsps in each).


Bake in oven for 20 minutes. Allow to cool for a bit before you frost them.


Icing Ingredients

100g unsalted butter

600g icing sugar

250g cream cheese

heart jellies (1 for each cupcake)



Whip the icing ingredients together, add the icing bit by bit and add more or less of what ever you like to your own taste- I tend not to weigh these and just wing it!

Pipe onto cupcakes, sprinkle a bit of crumbled red velvet and decorate each with a jelly heart.
