Coconut and Cranberry Paleo upside down bread

My sister is obsessed with everything Crossfit and Paleo, so when I came across this recipe and actually liked it,I just had to try it! I swapped out raspberries for cranberries as I didn’t have raspberries  that day. It is a very wet and liquidy recipe, I baked it for much longer than recipe stated, I also had to cover the top with tinfoil to prevent it from burning. When it was cooked I flipped it upside down because all the cranberries had more or less sank!

Ingredients

2eggs

1/3 cup olive oil

1/2 cup honey

1 cup coconut milk

2 tsps vanilla extract

1 cup of ground almond

1/2 cup coconut flour

1/4 cup desiccated coconut

1tsp baking powder

1 cup cranberries

Method

Preheat the oven to 180ª and line a loaf tin.

Mix together the eggs oil and honey.

Add coconut milk, vanilla, almond, coconut flour and baking powder, and desiccated coconut, then mix in the cranberries.

Pour into the tin and bake for 50-60 minutes.
