Chocolate Chip crunchy M&M cookies
I have been looking for a decent cookie recipe for literally my whole baking life. I think I’m almost there! This recipe is very good- not too sugary, just enough crunch and the perfect amount of chewy and they keep fresh for a few days. I made a big batch of them for a bake sale and packaged them up in clear cellophane tied with ribbons. I was proud of how well they turned out!! I’d recommend making the batter a day or two before cooking them.
3/4 cup margarine
1 1/4 cup brown sugar
1/4 cup white sugar
1/2 tsp vanilla extract
1 egg yoik
2 1/4 cup of flour
2 tsp cornflour
1/2 tsp baking soda
1 cup chocolate chips
1 cup of crunchy M&Ms
Mix butter, sugar and vanilla.
Add the egg and then the yolk.
Mix the dry ingredients then combine everything.
Add the chocolate chips to the dough.
I like to roll the dough into a long cylindrical piece and cut off pieces for each cookie or use a tablespoon to measure so that each cookie is the same size.
Bake in the oven for 7-10 minutes at 180ª- keep an eye on them and take out when they are browned on the edges and golden in the centre.
Then…….. EAT ONE WARM! Amazing! 😀
