Chocolate Peppermint Cupcakes

At christmas time I found  a tub of what looked like crushed candy canes and I felt compelled to make cupcakes and top them with it. After a lot of time on Pinterest and googling peppermint cupcake recipes I settled on a chocolate based cupcake with peppermint essence.

A peppermint cupcake is not something I thought I  would ever love, or even like but I LOVED it. A minty taste for me was always either a mint choc chip ice cream or chewing gum or a very decent dark chocolate! I am now converted!

Here’s the recipe 😀

Ingredients

Cupcakes

225 grams self-raising flour

4 tablespoons cocoa powder

1 teaspoon baking powder

225 grams caster sugar

225 grams margarine

4 eggs

1 teaspoon peppermint essence

100 grams plain chocolate

Icing

115 grams unsalted butter

225 grams icing sugar (sifted)

1 teaspoon peppermint essence

Jar of crushed candy cane candy for decorating.

Method

Preheat oven to 160ºC.

Sieve flour, baking powder and cocoa together.

Beat butter and sugar together in another bowl. Add eggs one at a time and beat together. Add flour mixture gradually.

Stir in the mint essence and choc chips.

Spoon mixture into cases and bake for about 25 mins.

Icing

Beat icing sugar and butter in a bowl.

Add in the mint essence. (Taste until it’s to your liking)

Ice the cooled cupcakes and decorate with the crushed candy canes.
