Chocolate chip cupcake with blue cookie monster frosting

I have wanted to make these FOREVER!! So I got a request to make them for a communion after party! So I made a chocolate chocolate chip cupcake to start. Plain frosting with blue colour paste!

I had great intentions with these, I had planned on fresh cookies for there mouths but never got around to doing it AND when it came to frosting the store was obviously  closed! My sister was horrified that I used digestives but I think they look ok!! 😀

– and here’s the recipe!

Ingredients for cupcake

300g self raising flour

2 eggs

4 tbsp cocoa powder

1 tbsp baking powder

200g caster sugar

100g chocolate chips

220ml sunflower oil

220ml milk

Method

Preheat oven to 220ª

Beat eggs till foamy

Mix dry ingredients

Make a well in the middle of the dry ingredients and add the eggs, milk and oil.

Add chocolate chips

Pop into cupcake cases and bake for 25- 30 minutes

The frosting

So of course as always I forgot to get a few bits for this! I ended up using crafty googly eyes that were not edible!  For a first attempt I reckon they turned out pretty good!! 😀

Ingredients

500g icing sugar

160g unsalted butter

50ml milk

1/2 tsp vanilla extract

blue food colour paste

Method

Whip together the icing sugar, butter and add milk a little at a time, then add the vanilla.

Use a toothpick to add the coloring until you get desired colour.
