Strawberry vanilla cupcake with strawberry red frosting topped with Haribo strawb

Before anyone makes fun of me for saying “strawbs” let me clarify that I prefer to use the fullword strawberry AND the Haribo Strawberry jellies are actually called Strawbs- who knew? Not me anyways!

So the place that I buy a lot of cake boxes and supplies from got in a huge range of extracts, they are quite pricey at about €8 each BUT they are very strong so I know it’ll last!! I just had to have it!

The cupcake recipe

3oz margarine

10oz caster sugar

8 1/2oz plain flour

1tbsp baking powder

1/4 tsp salt

240ml milk

1/2 tsp vanilla extract

2 large eggs

Preheat the oven and prepare muffin tin.

Mix the flour, butter, sugar, baking powder and salt until well mixed.

Whisk together the milk, vanilla and eggs until combined, pour 3/4  of the milk mixture into the dry ingredients and mix on a slow speed increasing speed until smooth and thick, add the remaining milk until you have a smooth batter.

Divide the batter into the tins, pop in oven and bake for approximately 20 minutes or until springy to touch. Leave to cool in the tin for a short time and then cool further on a wire rack.

The frosting

500g icing sugar

160g unsalted butter

50ml cream

1/2 tsp strawberry extract

red colour paste

Whisk the sugar and the butter together fast until combined, whisk in the cream slowly and beat until fluffy, then add the strawberry and red paste then combine well.

Fill icing bag and frost away! Top with Haribo Strawb! 😀
