Vanilla Pink Ice-Cream cupcake

I saw a pink and white frosted cupcake in a magazine recently and I just had to try it out- they didn’t turn out at all how I had expected but at the same time I am pleased with them and nothing went wrong for once. The only issue I had was the fact that they do not look like a two tone 99!!

The cupcake recipe

3oz margarine

10oz caster sugar

8 1/2oz plain flour

1tbsp baking powder

1/4 tsp salt

240ml milk

1/2 tsp vanilla extract

2 large eggs

Preheat the oven and prepare muffin tin.

Mix the flour, butter, sugar, baking powder and salt until well mixed.

Whisk together the milk, vanilla and eggs until combined, pour 3/4  of the milk mixture into the dry ingredients and mix on a slow speed increasing speed until smooth and thick, add the remaining milk until you have a smooth batter.

Divide the batter into the tins, pop in oven and bake for approximately 20 minutes or until springy to touch. Leave to cool in the tin for a short time and then cool further on a wire rack.

The frosting

500g icing sugar

160g unsalted butter

50ml cream

1/2 tsp vanilla extract

pink colour paste

Whisk the sugar and the butter together fast until combined, whisk in the cream slowly and beat until fluffy, then add the vanilla and combine well.

Get 2 bowls and divide frosting equally-  put  pink colour paste into one of the bowls and mix well.

Fill icing bag with white frosting on one side and pink on the other.

Pipe onto cupcakes once they are  cool enough.
