Mint Choc chip cupcake with mint green frosting topped with an After Eight

So I’ve been away for a bit! A well deserved holiday in Portugal! So I’m back now to my weekly posts!

Here’s the latest 😀 

Ingredients

300g self raising flour

4 tbsps cocoa powder

1 tsp baking powder

200g caster sugar

100g chocolate chips

220ml sunflower oil

220ml milk

1/2 tsp peppermint essence

Method

Preheat the oven to 200º C

Beat the eggs until foamy.

Mix all dry ingredients.

Make a well in the middle and add the eggs, milk and oil.

Stir in the chocolate chips.

Add 1/2 tsp of peppermint essence, if you feel you need more add it.

Bake for 25- 30 minutes.

Frosting

70g unsalted butter

2 tbsp cream or milk

1 cup icing sugar

green colour paste

Whip together  until light and fluffy.

Add green coloring with a toothpick until you get desired colour.

Put in to piping bag and pipe on to each cupcake.

Decorate each one with an After Eight Sweet.
