I like to call this the dreaded giant cupcake! For some reason something always goes wrong for me on this! Although I do love decorating the top part of it!!
I made one for a family members 50th and a few of my Mom’s friends birthdays too!
Even though I manage to save them I still don’t enjoy making them anymore!
Anyways here’s the recipe I use:
The cake batter
2 and 3/4 cups of flour
1/2 a cup of cake flour
1 Tablespoon of baking powder
1 Teaspoon of Salt
8 ounces of unsalted butter
2 and 1/4 cups of sugar
3 large eggs and 1 egg white
1 cup of milk
1 and 1/2 tablespoons of vanilla extract (vanilla essence will also do)
Method:
Sieve all dry ingredients together, then add butter and whisk to a pastry like texture, then slowly add in the wet ingredients until there are no lumps and the mixture is thick and creamy. Spoon into each side of tin leaving about an inch or so for the cake to rise. Then bake in oven at 180˚ until golden on top. Check to ensure it’s cooked through by inserting a bbq squeezer into the middle.
I like to fill the centre of mine with jam and buttercream and do a quick crumb coat so it’s easier to decorate.
It is also much quicker and easier to add finger biscuits to the base- I find doing a chocolate or candy melt base a complete nightmare!!
The frosting
60g of unsalted butter
50g of icing sugar
a dash of food colouring (keep adding until you get desired colour)
Blend together and pipe onto the cupcakes once it’s cooled.
Decorate with confetti sprinkles and a ribbon if you have one!
