My Aunt makes an amazing lime cheesecake- I should have asked for her recipe instead of using this one! Hers is defo wayyyyyy nicer! This was very wet and never set fully 😦 It tasted good though!! 😀
15 digestive biscuits
juice and zest of 4 limes
1 pint of double cream
1 large can of condensed milk
Whizz up the biscuit into fine crumbs.
Melt the butter and combine the two.
Add to tin and pop in the fridge to set.
Zest the limes,then juice them
Combine the lime juice, double cream and condensed milk.
Whisk until thick.
Add lime zest.
Whisk again until thick.
Scoop onto of biscuit base and pop in fridge to set.
The recipe I used said to chill for 2 hours however I left it in overnight and was still not as solids i had hoped.
