I have always loved anything coconut and obviously chocolate too! I discovered these in the US on my J1 a few years ago! They are made so many different ways but I prefer them the simplest way! I make these maybe a few times per year! Usually I just use the desiccated coconut in my cupboard but this time (as I have just moved) I used a “fancy shredded coconut” which I found in my new local supermarket.
3 cups of coconut
100g chocolate (dark or milk)
pinch of fleur de sel
Toast the coconut 1cup at a time in a large wok or frying pan.
When it is golden in colour remove to a cold bowl and repeat until all coconut is golden. You’ll have to watch this as it is very easy to burn the coconut!
Stir in a pinch of salt.
Melt chocolate over a bain marie.
Combine chocolate and coconut mixture and taste to check the salt.
If you do not like salt and chocolate together- leave this out.
On a sheet of baking parchment drop spoonfuls of the mixture about 1inch apart from each other. Sprinkle a flake of salt on each top. You can make these as big or as small as you want. This recipe makes 6-8.
Chill in fridge for about 20-30 minutes until hardened.
