Chocolate Marshmallow Whoopie Pies

I have wanted to make these for ages! Made coloured ones years ago and they were amazing so obviously when I got a Whoopie Pie recipe book for my birthday I had to try them again!

Whoopie Ingredients

125g margarine

90g brown sugar

90g caster sugar

1 egg

1tsp vanilla extract

300g flour

50g cocoa powder

1.5 tsp bicarbonate of soda

1 tsp salt

250ml milk


Preheat the oven to 180ªC.

Line a baking tray with parchment.

Beat sugars ans butter.

Add the egg.

Add vanilla.

In another bowl sift the flour and cocoa powder and bicarb soda and salt.

Fold into sugar and butter mixture.

Add milk.

Pop into a piping bag and pipe 12 circular blobs of batter onto your baking tray.

Bake for 8-10 minutes.

Marshmallow filling

50ml boiling water

15ml gelatine (powdered)

175g caster sugar

75ml golden syrup

25ml cold water


This was the interesting and fun part as I’ve never done this before!

Put the boiling water into a bowl and add the gelatine.

Whisk until dissolved.

Heat sugar golden syrup and cold water in a pan until it comes to the boil.

Gradually add the hot syrup to the bowl and mix on low speed.

Then whisk on high speed for 5+ minutes until it’s marshmallowy!

This is the hard part- try to put into an icing bag and pipe onto each half of the whoopies, then pop on the lids!
