Lemon cookies

I found his recipe recently and saved it to my Facebook! Finally got around to doing it today! I’ve adjusted the recipe to suit me and make them a tad more lemony! The buttercream filling could be halved as I had far too much! They’d also be just as nice without the filling if you’re not too bothered! And they’ll go further!

Ingredients

1/2 cup butter

1/3 cup of sugar

1 egg

1/2  tsp lemon juice

1/2 tbsp lemon zest

1/2 tsp vanilla

1/4 tsp baking powder

1 1/8 cups flour

Method

Cream the butter and sugar.

Add in the egg.

Add the lemon zest, lemon juice and vanilla.

Mix well.

Add the salt, baking powder and flour.

Mix well.

Divide batter into 1 tbsp balls and flatten slightly.

Pop onto a lined baking dish and bake at 180ºC for 10-12 minutes until golden.

The frosting

1/4 cup butter

1 1/2 cups icing sugar

2 tbsp milk (add one at a time)

1/2 tsp vanilla

1/8 tsp salt

1/2 tsp lemon juice

lemon zest ( I used the rest of the lemon’s zest)

Method

Pop all into a bowl and mix well.

If it looks to runny pop into the fridge to harden.

Apply to cookies with a knife.
