Carrot Cake Whoopie Pies

These were quite interesting but I’d still rather  an actual carrot cake, still worth a try though!


150g margarine

150g brown sugar

1tsp vanilla extract

300g flour

1.5 tsp bicarbonate of soda

1 tsp salt

1.5 tsp nutmeg

1 tsp cinnamon

100ml buttermilk

175g grated carrots

75g chopped walnuts


Preheat oven to 180ªC and prep a tray with parchment.

Whisk margarine, brown sugar and vanilla. Add eggs one by one.

Sift flour, bicarbonate of soda, salt, nutmeg and cinnamon.

Fold into the 1st mixture. Add buttermilk. Fold in carrots and walnuts.

Pop into a pastry bag and pipe onto the baking tray.

Bake for about 12 minutes.

Cream cheese filling

120ml double cream

100g cream cheese

15ml honey

1/2 small orange zest


Whip the cream until stiff.

Add the cream cheese, honey and orange zest.

I found this wouldn’t stay stiffened-found it very wet- would not make it again.

Pipe on the frosting and add a lid!
