The yellow Easter cake

For some reason I associate the colour yellow with Easter! So this simple Easter cake is just a basic vanilla cake with yellow buttercream frosting.

I actually made 2 in the end as the pans I had were small. Then they were shipped off to a bake sale!

The cake batter

2 and 3/4 cups of flour

1/2 a cup of cake flour

1 Tablespoon of baking powder

1 Teaspoon of Salt

8 ounces of unsalted butter

2 and 1/4 cups of sugar

3 large eggs and 1 egg white

1 cup of milk

1 and 1/2 tablespoons of vanilla extract (vanilla essence will also do)

Method:

Sieve all dry ingredients together, then add butter and whisk to a pastry like texture, then slowly add in the wet ingredients until there are no lumps and the mixture is thick and creamy. Spoon into a square tin leaving about an inch or so for the cake to rise. Then bake in oven at 180˚ until  golden on top. Check to ensure it’s cooked through by inserting  a bbq squeezer into the middle.

The Yellow Vanilla Frosting

Ingredients

2 cups of icing sugar

2/3 cups unsalted butter

1-2 tbsp milk/cream

vanilla extract

yellow colour paste

Method

Beat the butter, add the icing sugar and milk.

Add the vanilla extract and yellow paste.

Decorate with Easter eggs and ribbons!<3
